Chris Thé is renowned in Sydney for his pastry which you can only find at his gorgeous bakeries in Sydney.  Formerly the pastry chef at one of Sydney's best restaurant Claudes, Chris and his team turn out amazing treats focusing on seasonal ingredients and traditional techniques. No wonder there is a queue out the door 24/7.

In this four hour class, you'll hear all the tips and tricks for making a range of different pastry types including shortcrust and puff using Chris' own recipes. You'll get up close and personal with some flour and butter and learn how to mix, rest and roll with expertise. This is a hands on class , in other words, this is going to be special. The last class sold out in one day so don't wait or you might miss out.  If you’re lucky, you may even get a tip on how to make the amazing (and now world famous) strawberry watermelon cake. All experience levels welcome. 

Class outline: Basics of pastry, making shortcrust, hands on exercise, break & snacks, making rough puff pastry, hands on exercise. At the end of the class, we'll join Chris for a glass of wine and antipasto.

What we provide: Take home galette x 2, pastry scraper, recipes, refreshments and aperativo with wine from Sparrow & Vine. And lots of tastings of course!

What to bring: Closed shoes, apron, rolling pin.
