If there is one person who can teach you the ins and outs of smoking meat at home it is Graeme Stockdale. Chef at the Stockpot Kitchen, famous in the Byron area for churning out the best Southern style BBQ in the region each week at the Bangalow Bowlo. Graeme, joined by Kate Walsh, will give you the low down on styles of smoking, brines, spice rubs and smoking mixes (tea v woodchips). We'll teach you you how to easily smoke meats and vegetables in a wok and then we'll step outside to the BBQ where we'll make a home smoker from scratch and fire it up. You'll be smoking meats and vegetables at home in no time. 
Class outline: demonstration of the basics of brining, spices and smoking mixes, wok smoking, BBQ hot smoking, tastings.
